Gluten-Free Energy Bites

These little one bite goodies disappear before I can get them safely in the fridge.

They are very easy to make, very tasty and healthy - ish.


One bowl.

One spoon.

One cookie tray.

5 ingredients

No baking required


Can it be any simpler?

Here We Go:


1 cup instant steel cut oats 1 cup unsweetened coconut (shredded) 1/2 cup natural peanut butter 1/3 cup chocolate chips 1//3 cup of honey Dash of cinnamon and nutmeg optional

Easy button: mix all together in ONE bowl. Form into round balls on parchment lined cookie sheet and chill in fridge about 15 minutes.

You can use that time to wash your one bowl and spoon. Scroll your Instagram or Facebook feed. Upload the pics and recipe.




What I love about these is that they are easily adapted to suit dietary needs. There's no eggs. No milk. No flour. No sugar. Steel cut oats are labelled as "gluten-free" but contamination can occur so always read labels. Peanut allergy? Substitute any of the nut butters. Don't want the chocolate chips? Toss in raisins. Skip the coconut completely if you don't fancy it. Toss in some ground flax seed for a healthy boost. Personally I find the 1/3 cup of honey too sweet, so I usually cut that a tad and include half a mashed banana, or even a few tablespoons of applesauce.


I make a second batch usually and substitute raisins for chocolate chips, a few tablespoons of applesauce, and then roll the formed balls in crushed walnuts. Nom. Nom. Nom. Once they have been in the fridge, I can grab a few in a bag for on the go. A perfect snack that gives good energy.
